Ingredients

Chocolate Cake

  • 2 cups all purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 3 pcs eggs
  • 1 2/3 cups white granulated sugar
  • 1 cup Lady's Choice Real Mayonnaise
  • 1 1/3 cup water

Chocolate Ganache Frosting

  • 1 1/2 cup semi-sweet or dark chocolate
  • 1 cup heavy cream
Cooking Method

Chocolate Cake

  1. Preheat oven to 350°C. Grease and flour two 9-inch round cake pans. Set aside.

  2. In a medium bowl, combine flour, cocoa, baking soda, and baking powder. Set aside.

  3. In a large bowl, beat eggs, sugar, and vanilla on high speed for 3 minutes or until the mixture is light and fluffy. Add Lady’s Choice Mayonnaise and mix at low speed until combined.

  4. Divide the flour into four portions and the water into three portions. Add the first portion of flour into the wet ingredients and mix. Then add the first portion of water and mix. Continue until all the flour and water portions are used up. Make sure to mix until no flour streaks remain.

  5. Divide the batter into two and pour into the prepared pans.

  6. Bake for 30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Take out the cake and cool for 10 minutes on a wire rack.

  7. Remove the cake from the pans and cool completely.

  8. Decorate the cake with desired frosting and toppings. Chill for another 20 to 30 minutes. Slice and serve.

Chocolate Ganache Frosting

  1. Chop chocolate and place in a heat-proof bowl.

  2. On a small saucepan, heat up the cream until simmering. Make sure to watch the cream and don’t let it boil.

  3. Pour warm cream on top of the chopped chocolate and let it sit for 3-5 minutes.

  4. Using a rubber spatula, mix the chocolate and cream together until you get a smooth ganache.

  5. Allow to cool at room temperature, making sure to cover with cling wrap touching the surface of the ganache.

  6. Once cooled, frost your cooled moist chocolate mayo cakes with this rich and delicious chocolate ganache.
