Ahh, the wonder that is Ilonggo cuisine. Iloilo is known for many specialties both savory and sweet, from hearty batchoy to chewy baye baye. But Molo district offers its distinct fare, molo soup (also called pancit molo). A broth-based noodle dish with meat-filled dumplings or wonton, molo soup traces its origins to the Philippines’ Spanish occupation. Much like how Parian and Binondo in Manila were developed into Chinatowns, Molo was Iloilo’s designated Chinese settlement.

Tips

Ingredients
- 1/4 kg ground pork
- 1 pc egg, beaten
- 3 pcs Knorr Shrimp Broth Cube
- 3 tbsp cornstarch
- 1 cup singkamas, minced
- 20 pcs molo wrappers
- 1 tbsp cooking oil
- 1 pc small onion, chopped
- 7 cloves garlic, minced
- 4 cups water
- to taste ground black pepper
- 1 tbsp spring onions, chopped

Dumplings
Start by making the dumplings. Dissolve 1 Knorr Shrimp Broth Cube in beaten egg. Combine egg and broth cube mixture with pork, cornstarch, and singkamas in a bowl. Mix well.
Wrap a teaspoon of mixture into molo wrapper. Seal by brushing the edges with water. Repeat until mixture is finished.
Broth
Prepare and heat a pan over medium heat. Sauté onion and garlic in oil.
Add water and remaining Knorr Shrimp Broth Cube in the pan and bring to a boil. Mix until cube is dissolved.
Assembly
Lower the heat. Drop molo dumplings into the pan and simmer for 2 minutes.
Cut extra molo wrappers into thin strips for noodles. Add strips of molo wrappers to soup. Add salt and pepper to taste. Simmer for another minute, then serve with a sprinkling of spring onions and fried garlic.
