Ingredients
  • 1 kg chicken thigh fillet

Chicken Tocino Marinade:

  • 4 pcs garlic cloves, minced
  • 1/2 cup brown sugar
  • 2 tbsp Knorr Liquid Seasoning Original
  • 1/2 cup pineapple juice, unsweetened
  • 1 tbsp vinegar
  • 1 tbsp flour
  • 1/2 tbsp ground pepper
  • salt to taste
  • few drops red food colouring, optional

For Cooking Chicken Tocino:

  • 1 cup water
  • 2 tbsp cooking oil
Cooking Method
  1. Slice the chicken thighs into bite-sized pieces and set aside.

  2. In a shallow container, mix all the chicken Tocino marinade ingredients together.

  3. Add the chicken thighs into the marinade and coat well. Cover and let it marinate overnight. If you’re pressed for time, you can marinate the Tocino for at least 1 hour but it’s best to let it sit longer for the flavors to penetrate the chicken.

  4. When ready to cook, take the marinated chicken out of the refrigerator and bring to room temperature.

  5. Place the chicken pieces in a pan and add 1 cup of water. Bring the water to a simmer and let it simmer for 15 minutes uncovered or until most of the liquid has evaporated.

  6. Add the oil and cook the chicken Tocino until the liquid in the pan is thick and syrupy while the chicken should be slightly charred.

  7. Serve immediately with rice, a side of vegetables, and egg for a filling meal that’ll energize you throughout the day.

It’s easier to cook for Ramadan when the prep has already been done. Make a big batch of this chicken Tocino and freeze it in portions. This particular recipe will stay fresh in the freezer for up to one month. While you can’t cook this straight away from the freezer, you can have it ready for breakfast the next day by thawing it in the refrigerator while you sleep. Once thawed, it only takes minutes before you’re left with an energizing meal for Ramadan.
