Ingredients
- 4 pcs chicken breast fillet (around 600-700grams)
- 3 tbsp Lady's Choice Real mayonnaise
- 1 pc large egg
- 2 pcs garlic cloves, minced
- 1 1/2 tbsp flour
- 1/2 tsp iodised salt / table salt
- to taste pepper
- 1 cup flour
- 1/2 cup Parmesan cheese, grated
- 2 tbsp cooking oil
- 2 tbsp butter
- 500 g pasta, cooked according to package directions, saving ¼-½ cup of pasta water
Chicken Piccata Sauce:
- 1/2 pc Knorr Chicken cube, dissolved in 1 cup water
- 3/4 cup heavy cream
- 6 tbsp lemon juice, freshly squeezed
- zest of 1 lemon
- 1/4 cup capers, adjust based on taste
- 500 g pasta, cooked according to package directions, saving ¼-½ cup of pasta water

Prepare and Cook the Chicken Breasts:
Doing this one piece at a time, cover the chicken breast in cling wrap and use a kitchen mallet to flatten the chicken to about ¼ inch in thickness. This step ensures that the chicken picatta will cook evenly. Set aside the chicken breasts once done.
In a large bowl, add Lady’s Choice Real Mayonnaise, the egg, minced garlic, 1 ½ tbsp flour, salt, and pepper. Mix well.
Add the chicken breasts into the bowl and mix, making sure that all the chicken pieces are coated. Set aside.
In a separate bowl, mix together grated parmesan cheese, 1 cup flour, salt, and pepper. Lightly dredge the coated chicken breasts in this mixture and tap any excess off. Set aside.
Heat up oil and butter in a medium sized frying pan.
Once oil is hot, add in the chicken breasts and fry for about 3-4 minutes per side or until the chicken is cooked. Make sure to not overcrowd the pan by cooking in batches.
Once all the chicken is cooked, set aside and drain the oil from the frying pan. You will use the same pan to make the chicken picatta sauce.
Creamy Chicken Piccata
Add the ingredients of the chicken picatta sauce into the pan.
Mix and let the mixture come to a boil. Bring down the heat to a simmer and let the mixture simmer for 3-4 minutes.
Taste and season with salt and pepper according to taste.
Scoop about ¼ cup of sauce and set aside.
In the same pan, add in your cooked pasta and mix in with the sauce. Add in ¼ to ½ cup of pasta water into the mix for a silky sauce.
Place the pasta on a serving platter and add the crispy chicken on top.
Finish the dish off by drizzling the chicken piccata sauce on top.
