In a large heavy-bottomed shallow pot, add all the fish adobo ingredients except for the fish.
Lay out the fish flat on the pot making sure that no two fish pieces are on top of each other. This helps the adobo flavors really seep into the fish.
Bring the adobo mixture into a boil over medium heat.
Add sugar, if using.
Lower heat and let the adobong isda simmer for 12 minutes.
Turn over the fish and let the mixture simmer for another 12 minutes, making sure the pot doesn’t dry out completely. To prevent drying out, feel free to add a few tablespoons of water every now and then.
Once cooked, transfer to a serving plate and serve with rice! Now you can add fish adobo to your weekly meal plans.
