Say goodbye to your favorite crispy lumpia. This meat-free and lent-friendly Lumpiang Sariwa will be the mainstay of your dinner table during holy week and beyond. With a few simple ingredients and Knorr Shrimp and Pork Cubes, this fresh lumpia recipe has all the meaty flavors minus the meat. Crispy tofu is added inside for some textural contrast alongside other delicious vegetables for a Lumpiang Sariwa that’s unlike anything else you’ve ever tried. The best part about this lumpia is that there’s no frying in hot oil involved. Instead of a crispy exterior, this lumpia is enclosed in a soft crépe-like wrapper that makes eating your vegetables so much easier.

Ingredients

For the Lumpiang Sariwa Filling:

  • 3 tbsp canola oil, divided
  • 2 packs large firm tofu, drained and cut into small cubes
  • 8 pcs garlic cloves, minced
  • 1 pc medium onion, chopped
  • 1/2 cup water
  • 1 pc Knorr Shrimp Cube
  • 2 cups sweet potato
  • 1 1/2 cups carrots, cut into matchsticks
  • 4 cups cabbage, shredded
  • 2 cups string beans, chopped
  • 1/4 cups cilantro, chopped

For the Lumpiang Sariwa Wrap:

  • 2 pcs eggs
  • 1 1/2 cups milk or Water
  • 1 1/2 tbsp oil
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt

For the Lumpiang Sariwa Sauce:

  • 2 cups water
  • 1/2 pc Knorr Pork Cube
  • 1/3 cup brown sugar
  • 1 tbsp soy sauce

For Assembly:

  • 6 pcs romaine lettuce leaves
  • 1/3 cup peanuts, crushed
  • 1 1/2 tbsp garlic, minced
Cooking Method

For the Lumpiang Sariwa Filling:

  1. Heat 1 tbsp oil in a pan over medium heat. Cook cubed tofu until crispy. Set aside.

  2. Next, heat 2 tbsp oil in a pan and sauté garlic and online until fragrant.

  3. Add ½ cup water, Knorr Shrimp Cube, and sweet potato into the pot. Cook for 6 minutes or until the sweet potatoes are soft.

  4. Add carrots, cabbage, string beans, and cilantro into the pot. Cook for 5 more minutes then take off the heat. Set aside.

For the Lumpiang Sariwa Wrapper:

  1. In a medium bowl, whisk the eggs until broken apart.

  2. Add milk to the eggs and whisk to combine.

  3. Slowly add the oil to the mix while whisking.

  4. Add the flour and salt. Mix well and set aside.

  5. Heat up a wide non-stick pan over medium heat. Spread a thin layer of butter or oil. You can use an oil spray if that’s available to you.

  6. Pour a little less than half a cup of Lumpiang Sariwa Wrapper batter into the pan. Tilt to spread the batter around.

  7. Let it cook for 1-2 minutes or until the top is dry.

  8. Using a spatula, remove the cooked Lumpiang Sariwa wrapper and place on a flat plate. Repeat until there’s no more batter.

For the Lumpiang Sariwa Sauce:

  1. Add water into a sauce pan. Bring to a boil. Add Knorr Pork Cube, brown sugar, and soy sauce. Mix until the pork cube is dissolved.

  2. Add the cornstarch diluted in water into the pot and mix well. Simmer until the Lumpiang Sariwa sauce is thick but still pourable. Set aside.

For Assembly:

  1. Gather all the components of the Lumpiang Sariwa (filling, wrapper, sauce, toppings) and lay them out in your workspace.

  2. Get a wrapper and place it on a flat plate. Put a lettuce leaf on top. Make sure that a small part of the lettuce leaf goes beyond the edge of the wrapper for a cleaner presentation.

  3. Next, spoon some filling on top of the lettuce.

  4. To roll, fold the bottom half of the wrapper to the middle before proceeding to roll on the sides. Place on the serving plate with the seam side down.

  5. Repeat until there’s no more filling/wrappers left.

  6. Drizzle the sauce on top and garnish with crushed peanuts and minced garlic.

Some recipes of Lumpiang Sariwa have ground pork or shrimplets to add a depth of flavor into the dish. For this recipe, we use Knorr cubes to make a flavorful dish minus the meat. One cube is equivalent to 1 kilogram of pork or shrimp in flavor, making these cubes a great way to add flavor without breaking the bank.
