Musubi is another word for onigiri: a rice ball with savory fillings. Despite its Japanese origins, the handheld snack is a purely Hawaiian creation, as beloved as loco moco and poke bowls. Typical Spam musubi recipes consist of teriyaki-glazed meat and rice wrapped in nori. This version makes it more interesting with kimchi, hot sauce, and Lady’s Choice Real Mayonnaise. It’s the perfect grab-and-go snack to have in the car.

Ingredients
  • 3 tbsp oil, divided
  • 1 can Spam or any luncheon meat, sliced into 6-8 pieces
  • 1/2 cup kimchi, chopped
  • 3 cups day-old cooked rice
  • 1/2 cup Lady’s Choice Real Mayonnaise
  • 1-2 tbsp sriracha or hot sauce
  • 2 sheets nori, cut into quarters
Cooking Method
  1. Heat 1 tbsp oil in a pan. Fry Spam or luncheon meat until browned and crispy. Drain excess oil. Set aside.

  2. Prepare the rice: Heat remaining oil in a pan over medium-high flame. Add kimchi and fry for 3 minutes. Mix in rice. Remove from heat and set aside to cool. Divide rice into 6-8 portions depending on the number of Spam slices you have.

  3. Make the Spam musubi sauce: Mix Lady’s Choice Real Mayonnaise and hot sauce in a bowl.

  4. Assemble the musubi: Line a clean, empty Spam can with plastic wrap. Press a portion of rice into the can and pack it down gently. Spread spicy mayo over the rice, then top with luncheon meat.

  5. Gather the ends of the plastic wrap and gently pull the musubi out of the can. Peel the plastic off. Wrap musubi in a nori sheet seam-side down. Repeat with remaining ingredients. Serve immediately.

Once you’ve mastered the basics of making Spam musubi, you can go wild with different combinations. Add a layer of scrambled eggs to make a protein-rich, on-the-go breakfast. Sprinkle furikake, a savory Japanese seasoning, over the rice for extra umami. Try grilling the meat to give it a smoky flavor. Love sweet and savory together?
