Tacos are traditional Mexican food. A typical taco recipe consists of wheat or corn-based tortillas as the crust and is topped with different kinds of meat filling like goat, beef, pork, fish, shrimp, and chicken.

Ingredients
  • 100 ml pineapple juice
  • 100 ml orange juice
  • 15 g achuete powder
  • 5 g garlic, chopped
  • 15 g Guajillo chili
  • 100 g white onion, chopped
  • 5 g peppercorns
  • 1 g cinnamon powder
  • 1 g oregano
  • 10 ml white vinegar
  • 1 Knorr Pork Cube
  • 1 kg pork kasim, whole

Guacamole Ingredients

  • 150 ml vegetable oil
  • 5 g garlic
  • 50 g white onion diced
  • 250 ml water
  • 100 g fresh avocado
  • 100 g jalapeños
  • 1 g salt
  • 1 g white pepper

Pineapple Salsa Ingredients

  • 100 g pineapple (fresh or canned) cubed
  • 200 g tomatoes deseed and cubed
  • 50 g cilantro leaves roughly chopped

Soft Taco Ingredients

  • 100 g corn flour
  • 125 g all purpose flour
  • 37.5 g glutinous flour
  • 100 ml water
  • 100 g lard
  • 5 ml corn oil
Cooking Method
  1. Make the marinade by combining all ingredients (except the pork) in a bowl. Mix well until the Knorr Pork Cube is dissolved.

  2. Take a sharp knife and slice the pork thinly.

  3. Transfer the pork to a container and pour the marinade mixture over it.

  4. Cover and let the pork marinate in the refrigerator overnight.

  5. Once ready, cook the marinated pork on a stovetop griddle.

Guacamole Recipe

  1. In a pan, heat oil and sauté onions and garlic.

  2. Set aside and let cool.

  3. Transfer avocadoes, jalapeños, onions, garlic, and water into a blender.

  4. Blend until smooth.

  5. Season with salt and pepper.

  6. Pour into a bowl or into a container.

Pineapple Salsa Recipe

  1. Mix all ingredients in a bowl.

  2. Set aside and chill.

Soft Taco Recipe

  1. Take a large bowl and combine all ingredients. Mix well.

  2. Let dough rest for 30 minutes.

  3. Dust a surface (countertop or table) with some flour. Knead the dough and flatten it with a rolling pin.

  4. Make small tortillas by cutting the dough with a cookie cutter.

  5. Cook the corn tortilla on a griddle, toasting both sides lightly.

Unlike a birria taco recipe, tacos al pastor don't require slow cooking. As long as you marinate and prepare the tortillas ahead of time, making pork tacos for merienda doesn't take long.
