Ingredients
- 1/4 cup cooking oil
- 1 pc onion, minced
- 6 cloves garlic, minced
- 250 g pork kasim, cubed
- 250 g pork liempo, cubed
- 250 g pork liver, cubed
- 2 pcs Knorr Pork Cubes, crumbled
- 1 (250-g) pack tomato sauce
- 1 1/2 cups water
- 1 tsp sugar
- ground black pepper, to taste
- 2 pcs medium potatoes, cubed
- 1 pc medium carrot, cubed
- 2 tbsp raisins
- 1 cup cubed red and green bell pepper
- 2 bunches pechay, sliced (optional)
Feel free to adjust this pork menudo recipe to your liking. You can add peas for more veggies or skip the raisins if you don’t like the sweetness. Other recipes suggest adding a squeeze of calamansi juice to brighten up the rich, savory sauce. Have you heard of the variation of pork menudo called waknatoy from Marikina? Heat oil in a pot over medium flame. Sauté onions and garlic until lightly browned and aromatic.
Add pork kasim and liempo and sauté until lightly browned. Add liver and cook for 2 minutes.
Add Knorr Pork Cubes and stir until dissolved. Add tomato sauce, water, sugar, and pepper. Mix well.
Add potatoes and carrots. Lower heat and simmer until the meat and potatoes are completely cooked and the sauce is thick.
Add raisins, bell peppers, and pechay. Cook for 2 more minutes. Serve warm.
