These delicious mushrooms, flavored with a simple ginger scallion sauce, create the perfect dish that gives main character energy to enoki mushrooms.

Ingredients
- 1 400 gram pack enoki mushrooms
- water for balancing
- 1 tbsp neutral oil
- 1 stalk spring onions (scallion), finely chopped
- 1 tbsp thumb-sized ginger, minced
- 2 tbsp sesame oil
- 1/4 pc Knorr Chicken Cube

Cut off around 1 inch of the enoki mushroom root.
Using your fingers, gently separate the enoki mushroom into bite-sized pieces. Gently rinse under cold water and drain.
Prepare to blanch the mushrooms by bringing water inside a pot to a boil.
Prepare ice cold water in a separate bowl.
Blanch the enoki mushrooms in the boiling water for 1 minute. Strain the mushrooms and place in the ice bath for a few seconds. Drain out the water and place in a shallow serving bowl. Set aside.
Prepare the sauce by heating up the neutral oil and sautéing the scallion and ginger for 2-3 minutes or until fragrant.
Add the sesame oil and crumbled Knorr Chicken Cube.
Take off the heat and pour on top of the enoki mushroom.
Serve and enjoy this lightly seasoned enoki mushroom.
