- 1 tbsp unsalted butter
- 1 pc white onion, finely chopped
- 4 cups fresh or frozen broccoli, roughly chopped
- 2 cups carrots, peeled and chopped
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 1 pack 60g Knorr Chicken & Corn Soup, dissolved in 3 ½ cups of water
- 2 cups cheddar or melting cheese, grated

In a pot over medium heat, sauté onions in melted butter.
Once the onions start turning translucent, add broccoli, carrots, paprika, and black pepper. Sauté for 5-6 minutes.
Pour the dissolved Knorr Chicken & Corn Soup in the pot. Bring the mixture into a boil and let it boil for 5 minutes.
Remove pot from heat and using an immersion blender, blend the soup until you get the desired consistency. We recommend blending it all together if serving this broccoli cheddar soup to picky eaters.
If the broccoli cheddar soup becomes too thick when blended together, you can add a bit of chicken broth made with Knorr Chicken Cube dissolved in water.
Return to heat and add cheese. Simmer until the cheese melts.
