How to Keep Your Sopas Smooth and Creamy

Filipino macaroni soup naturally thickens as the noodles absorbs the broth while it sits. To make the soup smooth and creamy add a splash of milk or cream when reheating or just before serving to loosen the broth.

How to Prevent Mushy Macaroni in Sopas

One common challenge when making chicken macaroni soup is overcooked pasta. To keep the macaroni tender but not mushy, cook it just until al dente and avoid letting it sit too long in the hot broth. If preparing sopas ahead of time, you can also cook the macaroni separately and add it just before serving.

Easy Ways to Customize This Chicken Sopas

This rainy season recipe is easy to adapt using whatever you have on hand. Shredded rotisserie chicken, extra vegetables like spinach, kale, mushrooms, or malunggay leaves, and even different pasta shapes such as fusilli or farfalle work well in the creamy broth. For other variations, try the beefy sopas, chicken garlic sopas, or a meatless sopas.
