Ingredients
- 2 cups fresh asparagus spears or canned asparagus, roughly chopped
- 1 cup water
- 1 pack Knorr Cream of Mushroom Soup, dissolved in 3 cups of water
- 2 tbsp cream, optional
- 1 tbsp parsley, chopped

If using canned asparagus, drain and wash the asparagus under cold water for a fresher flavor.
In a pot, boil asparagus spears for 2-3 minutes. Allow it to cool and then transfer to a blender along with the water used for boiling.
Pulse the asparagus spears in the blender until you achieve the desired consistency. Set aside.
In another pot, combine the dissolved Knorr Cream of Mushroom soup and asparagus puréé. Bring over medium high heat and simmer for 6-8 minutes.
Remove pot from heat and stir in cream, if using.
Transfer your warm asparagus soup into bowls and top off with chopped parsley as garnish.
