Ingredients
- 6 tbsp Lady's Choice Real Mayonnaise
- 3 tsp mild curry powder
- 1/2 tsp ground cinnamon
- 2 tbsp mango chutney
- 3 tbsp sultanas
- 500 g cooked chicken, shredded
- to taste black pepper
Coronation chicken is a great way to repurpose your leftover chicken in the fridge.

Mix the Lady’s Choice Real Mayonnaise, curry powder, cinnamon, chutney and sultanas, and season with black pepper.
Add the shredded chicken and stir to coat in the sauce.
Stir in 2 tbsp of water to loosen the mixture as needed.
Season and serve with salad greens if you wish to enjoy it as a salad. If you want to make it a sandwich, place the coronation chicken and salad greens in between two loaves of bread.
