Mashing and rolling falafels can be fun when you do it with friends and family – or even the kids. Dip your hands in water before shaping each ball to keep the mixture from sticking to your fingers. The last thing to do is enjoy your fritters. But what is falafel without a side of pita or shawarma rice? You can assemble a falafel platter with rice, gyro, and hot sauce. If you want a grab-and-go lunch, do a Lebanese-style falafel wrap with toasted flatbread and pickled vegetables.

Mash chickpeas in a food processor or using a masher. Add the remaining ingredients and mix well.
Take a portion of the mixture and roll it into a 2-inch ball. Press it down like a patty to help keep its shape while frying. Repeat with the remaining mixture.
Pan-fry or air-fry falafel balls until golden brown. Set aside.
Make the roasted garlic mayo sauce: Drizzle olive oil on the cut side of the garlic. Wrap the head in foil, then cook in a toaster or air-fryer until the cloves are soft, about 8-10 minutes.
Peel off the roasted garlic cloves and mash them in a bowl. Once cooled, mix in Lady’s Choice Real Mayonnaise. Season with salt and pepper. Serve sauce drizzled over the falafel in a sandwich or salad.
