This chicken sandwich with pesto mayo is a delicious twist on the classic chicken sandwich. You can make your own homemade pesto, or use your favorite bottled pesto to make it!
With A Side of Crispy Potato Chips or Fries: Add a crunchy texture to your pesto mayo chicken sandwich by serving it up with crispy potato chips! You can opt for crispy kamote chips too, or you could also serve it with fries.
Serve it with a salad: A fresh garden salad tossed in a tangy vinaigrette would pair well with the pesto mayo chicken sandwich as well! Not only will it give you a more balanced meal; having a salad on the side can serve as a palate cleanser too.
Serve it as an appetizer: While the pesto mayo chicken sandwich is hearty enough to be a full meal, you can also cut it up into smaller portions and serve it as an appetizer!

Making this chicken sandwich with pesto mayonnaise is super easy! Start off by marinating the chicken fillet with steak seasoning and olive oil for 5 minutes.
Then, pan-fry or grill the chicken until fully cooked and set aside.
To make the pesto mayo, combine Lady’s Choice Chicken Spread (available here), pesto, and a pinch of salt in a small bowl.
Now you can assemble! Spread the pesto mayo on one side of the bread. Then, place the cooked chicken on the bread, add more pesto mayo, and top with lettuce and sliced tomatoes.
Season the tomatoes with black pepper and complete the sandwich with another slice of bread.
Making pesto is easy! All you need are basil leaves, garlic, olive oil or any neutral oil, pine nuts (cashews and walnuts can work, too!) and parmesan cheese. Blend all the ingredients in a blender or crush them using a mortar and pestle while gradually adding the oil, and then season with a dash of lemon juice, salt, and pepper. You can get a more detailed pesto recipe here.
Making your own pesto gives you more control over what it tastes like, and you can make a big batch, too, so that you can use it for other dishes!
The chicken may be getting some flavor from the pesto mayo, but a well-seasoned, flavorful chicken should still be the star of the show. Marinating it in the steak seasoning (or even just in a simple rub with your favorite spices plus salt and pepper) will give your chicken that extra oomph that will surely elevate your sandwich.
This sandwich has fresh ingredients that have a short shelf life: particularly, the lettuce and tomato. The lettuce will wilt fast, especially since the bread and chicken are hot, so it will lose its crunch when the assembled sandwich is stored. On the other hand, fresh tomatoes can spoil pretty fast, too.
You can prolong the shelf life of your sandwich by actually not making it until you’re ready to eat it! Make the chicken ahead of time and store it in an airtight container; cooked chicken can last up to a week in the refrigerator or longer if it’s frozen. The pesto can also last for a couple of months as long as it’s stored in the refrigerator, in an airtight container.
