Cajun Fries With Lady’s Choice Spicy Mayo

Ingredients
  • Lady's Choice Spicy Mayo
  • 4 - 6 extra large potatoes
  • 1/2 tbsp salt
  • ice
  • 4 - 6 tbsp cornstarch
  • vegetable oil for frying
  • Store-Bought Cajun Seasoning
  • 2 tbsp chopped parsley (optional)
Cooking Method
  1. Cut fries, lengthwise, as thin or thick as you prefer. You want them to be as long as possible. Soak in ice and salt in the chiller for at least 30 minutes.

  2. Drain fries from water. Pat dry with paper towels then toss with the cornstarch.

  3. Set oil in a pot over medium heat. Fry in batches for 10-12 minutes. Drain fries from oil and continue to cook the remaining pieces.

  4. Once all the potatoes have been fried, increase heat on the oil to medium high and flash fry the potatoes, again in batches, for 2-3 minutes until ends are crisped. Drain oil.

  5. Toss double-fried fries with the Cajun seasoning and sprinkle with chopped parsley. Serve with Lady’s Choice Spicy Mayo and enjoy! Note: You may use your favorite store-bought frozen fries and just follow cooking directions.
